There’s nothing like coming home after a long day and digging into a steaming casserole fresh out of the oven. I love this one because you can use up leftover rice and chicken that you have on hand to make life even simpler. It’s important for me to have something hearty to feed my kids after a long day at school, and this certainly fits the bill.

Did I mention that this is soo simple? It’s cooked chicken, cooked rice, frozen vegetables (no chopping here), cream of chicken soup and cheese. About the cream of chicken soup, you can use storebought, or if you want to make your own, here’s how I do it. It’s actually easier than you think.

This is a really versatile recipe. If you want to use turkey instead of chicken, go for it. Same goes for quinoa instead of rice. Use what you have on hand to make life a little easier.
