Tuna salad, chicken salad, and egg salad get most of the attention. But for my money, there’s nothing like shrimp salad. It has all the comforting creaminess of those others, but with—hello!—tender, sweet morsels of succulent shrimp!
What Goes In Shrimp Salad?
You’ll find a lot of recipes out there, and almost every one of the includes mayonnaise, chopped celery, and an herb like dill or parsley. But really, almost anything you can imagine in a tuna, chicken, or egg salad would be great in a shrimp salad (even avocados—check out my avocado egg salad recipe). My recipe takes those basics and just tweaks them a bit.
For one, there’s not too much mayonnaise. You need just enough to hold the salad together, but no more. You want the shrimp to be the star of the show.
Two, I like tarragon in my shrimp salad. It adds a little sophistication, a little special-ness that seems to work with shrimp.
Three, I add a dab of horseradish. Not so much to make the mixture spicy, but just enough to give it a little warmth.
And four, I add sliced scallions, for a little more color and crunch.
What Kind Of Shrimp Should I Use?
Back to the star of the show, though—the shrimp. I recommend buying them frozen because they’re frozen right on the boat when they’re caught so they’re really fresh. You’ll find frozen shrimp that are cooked and ones that are still raw. If you buy them cooked, see this post for how to thaw shrimp. Ingredients
- 1/3 cup mayonnaise
- 1 celery stalk, finely chopped
- 2 scallions, thinly sliced
- 1 Tbsp. fresh lemon juice
- 1 and 1/2 tsp. prepared horseradish
- 1 and 1/2 tsp. chopped fresh tarragon
- 1/4 tsp. salt, or more to taste
- 1/4 tsp. pepper, or more to taste
- 1 and 1/4 lbs. cooked shrimp, patted dry and chopped into 1/2 – to 3/4-in. pieces (see this post for how to cook shrimp)
Instructions
- Put the mayonnaise, celery, scallions, lemon juice, horseradish, tarragon, salt, and pepper in a medium bowl and mix well.
- Fold in the shrimp. Add more salt and pepper to taste.
- Ideally, chill for about an hour before serving.
