There’s no need for fried chicken for this sandwich, I’m making crispy breaded chicken in the oven. Crispy, crunchy chicken with less mess and trouble than frying? Yes, please. We’re also making a hot honey butter as our sandwich condiment to make it extra special. It’s simple, but brings so much sweet and spicy flavor to each bite.

What Kind Of Chicken For Chicken Sandwiches?
For this chicken sandwich recipe, we’re going to use chicken cutlets. These are chicken breasts that have been cut in half to make thinner pieces or that are pounded out with a meat tenderizer to be thinner and quicker cooking. You can usually find chicken already in cutlets at the store, but you can also make your own chicken cutlets.
Making Hot Honey Chicken Sandwiches
We’re going to start by preheating the oven to 450°F and getting ready to bread the chicken cutlets. The breadcrumb mixture is seasoned with onion powder, salt, smoked paprika, and garlic powder. It also gets a little bit of oil mixed right in. This helps it stick together and get deliciously browned and crunchy in the oven.
We’re also going to be dipping the chicken in egg before doing the breadcrumb coating. I did testing to try and make it work without the egg, but the crispy coating ended up falling off in places so don’t skip this step!
So, add the beaten egg and the seasoned breadcrumb mixture to separate zip-top bags or bowls and coat each piece of chicken first with egg, then breadcrumbs. Place the cutlets on a parchment lined sheet pan and bake for 15-20 minutes, until chicken registers 165°F on an instant read thermometer.
While the chicken is baking, mix up the hot honey butter. Combine softened butter, honey, cayenne pepper, and a small amount of salt and smoked paprika.
Assemble your chicken sandwiches by brushing the hot honey on the baked chicken. Place your cheese on the bottom half of your bun and place the warm chicken on top to help it melt. You could also place the buns with cheese in the oven for a few minutes to get toasty.
Top your chicken with pickles, lettuce, and the top of the bun and serve warm. Maybe with some extra pickles and potato chips on the side. :)
Hot Honey Chicken In The Air Fryer
Can you cook this crispy chicken in the air fryer? Absolutely!
You can follow the same recipe as below, just cook in the air fryer for 12 minutes instead of baking the chicken. Because of the size, this works best when you’re just making one or two chicken sandwiches.

DESCRIPTION
This Hot Honey Chicken Sandwich may just become your new favorite! Crispy chicken, hot honey butter, along with cheese and your favorite fixings.
Ingredients
- 1 cup unseasoned panko breadcrumbs
- 2 tsp. onion powder
- 1 and 1/4 tsp. salt, divided
- 1 and 1/4 tsp. smoked paprika, divided
- 1 tsp. garlic powder
- 3 Tbsp. cooking oil
- 1 egg
- 4 chicken cutlets
- 6 Tbsp. butter, softened
- 2 Tbsp. honey
- 1/4 tsp. cayenne pepper
- 4 burger buns
- 4 slices Havarti cheese
- 1/4 head iceberg lettuce, shredded
- 3/4 cup dill pickle chips
Instructions
- Preheat oven to 450°F. Line a sheet pan with parchment paper.
- In a pie plate or wide shallow bowl mix together panko, onion powder, 1 teaspoon of the salt, 1 teaspoon of the smoked paprika, garlic powder, and oil for a minute or two until all crumbs are coated in oil.
- In another pie plate or shallow bowl use a fork to gently beat the egg.
- Add chicken cutlets to the egg and turn to coat.
- Transfer chicken to panko mixture and turn to coat, pressing down on chicken gently to help crumbs adhere.
- Transfer chicken to prepared pan. Place pan in oven. Bake 15 to 20 minutes or until chicken registers 165°F on an instant-read thermometer.
- Meanwhile, in a small bowl mix together butter, honey, cayenne, remaining ¼ teaspoon of salt, and remaining ¼ teaspoon of smoked paprika.
- Remove chicken from oven. Immediately slather about 1 and ½ tablespoon of the butter mixture over each chicken cutlet.
- Place 1 slice of cheese on bottom half of 1 bun. Place chicken cutlet on top of cheese. Top with pickles, lettuce, and top of bun. Repeat with remaining ingredients.
