Wrapped in bacon with a brown sugar rub, these Bacon-Wrapped Chicken Breasts are a sweet and savory dish perfect for any night of the week.
There’s a saying that goes something like this, everything is better with bacon. And these Bacon-Wrapped Chicken Breasts are no exception. A spice rub with brown sugar and chipotle powder creates a spicy, caramely sauce that compliments the bacon fabulously.
One thing that I’ll mention is that it’s really important NOT to use thick sliced bacon. It just doesn’t wrap very nicely. Depending upon the size of the breast, I use 2 – 3 slices of bacon. I start by placing the end of a slice of bacon under one of the ends of the chicken breast and start wrapping. When that slice has covered the chicken breast, I place the end of another slice on top of the end of the wrapped piece and secure both pieces with a toothpick. I repeat until the chicken breast is covered.
The oven temperature for this recipe is quite high at 425˚F. This is to ensure that you don’t end up with soggy bacon. Because who wants soggy bacon? Not me! This does mean that you’ll want to watch the chicken closely for the last several minutes to make sure that it doesn’t over cook. If the internal temperature of the chicken reaches 165˚F before the bacon seems to be done, simply turn on the broiler until it crisps up. It usually only takes another 2 – 3 minutes.
Transfer the chicken to a rimmed serving dish and pour the syrupy sauce over the bacon-wrapped breasts. One of my favorite sides to serve with this is country fried potatoes. It’s kind of like breakfast for dinner elevated.
