This easy side dish recipe is super delicious and uses one of my favorite veggies – beet greens! You only need a few ingredients (garlic included!) and about 15 minutes for this tasty recipe.

What Are Beet Greens?
This vegetable is just what it sounds like – the leafy greens and reddish stems from the top of beets. They are related to, and similar in flavor to Swiss chard, but a little sweeter.
They usually are not available bagged on their own like some other greens. You’ll want to look for a bunch of 3-5 beets at the grocery store or farmer’s market with the greens still attached. Check to make sure the greens are a good color and healthy looking. Leaves that are bruised or yellowish are not ideal for eating.
Use the greens for this amazing garlicky beet greens recipe and save the beets for another recipe. You can make roasted beets in the oven or cook Instant Pot Beets.
Prepare The Greens
Start by cutting the greens from the beets. You’ll want to leave about an inch of stem on the beets which makes it a little less messy when you cook those.
Chop the stems into one inch pieces and rinse them very well. There can be gritty dirt still on there so make sure to wash thoroughly. Roughly crop the beet greens and rinse those really well too. But keep the stems and greens separate from each other because we’ll be cooking the stems for longer than the greens.
How To Make Garlicky Sautéed Beet Greens
The ingredient list for this recipe is short and simple. Other than those beet leaves and stems you just prepped, all you need is some oil, garlic, and salt.
Heat the oil in a large skillet over medium-high heat. Add the beet stems first and cook for a few minutes until fork tender. Add in the minced garlic and salt and stir. Then add in the beet leaves and cook until just wilted. It only takes another minute or two. That’s it!
If you’d like, you can add some heat with red pepper flakes. Some people enjoy a squeeze of lemon juice on their greens as well, so taste and adjust as needed.

This Garlicky Sautéed Beet Greens recipe is so quick and delicious that it’s the perfect side dish for any night of the week.
Ingredients
- 1 bunch beet greens with stems (taken from 3–4 beets)
- 2 tsp. olive oil
- 2 cloves garlic, minced
- 1/8 tsp. salt
Instructions
- Remove leaves from stems. Chop stems into 1 inch pieces. Put stem pieces into colander and rinse very well. Transfer stems to a plate and set aside.
- Roughly chop the beet leaves. Put leaves into colander and rinse very well.
- Heat the olive oil in a skillet over medium-high heat. Add the beet stems and cook while stirring often until only just fork tender, 2-3 minutes.
- Add the garlic and salt. Cook and stir another 30 seconds.
- Add in the leaves and stir while cooking just until leaves are wilted, 1-2 more minutes. Taste and add more salt if desired.
