Smoked Pork Chops

Smoked pork chops are incredibly flavorful, juicy and easy to make. All you need is a simple seasoning blend and a smoker to do the work for you.

Have you ever smoked pork? If you have, there’s a chance you’ve smoked some sort of pork shoulder for BBQ, which is delicious. But, if you have, you know it can be a long and laborious process. If you’re craving the taste of smoked pork, pork chops are the perfect thing to throw on your smoker. They don’t take as long to cook as a larger cut of meat and they come out super juicy with just a simple spice rub on them.

Knowing how to cook pork chops properly is an important skill in my book. I like to buy nice, thick (at least 3/4 inch), bone-in chops when they’re on sale. It gives me a break from chicken, the other white meat. Sometimes, I grill them, but when I really want to kick things up a notch, smoking them is really fun.

How To Smoke Pork Chops

Smoking pork chops is actually easier than it sounds. You could brine them if you wanted to for extra flavor, but I find that they come out juicy and delicious when I rub them with a bit of olive oil, salt, pepper, garlic powder, and if I’m feeling bold, some ground coriander and red pepper flakes.

Once they have the rub and oil on them, I lay them on a smoker that’s been heated to 225°F. As far as wood goes, pork is really great with a lot of different varieties. I prefer cherry, alder, apple, or pecan, but whatever you usually smoke with will generally work.

The name of the game is setting and forgetting while you have the chops on the smoker. I like to flip them after about 30 minutes, and I check them at the hour mark to see what the internal temperature is. It will take you about 75-90 minutes to reach 145°F internally, depending on the thickness of your chop. Once they reach that temperature, pull them from the grill, cover with foil, and rest for 10 minutes before serving.

You can serve these as they are, but I do like to put some of my smokey, sweet and spicy BBQ sauce out on the table, too. It pairs sooo well with the smoke kissed pork.

Ingredients

  • 2 and 1/2 lbs. bone-in pork chops, at least 3/4-inch thick
  • 1 Tbsp. olive oil
  • 1 tsp. salt
  • 3/4 tsp. black pepper
  • 3/4 tsp. garlic powder
  • Optional – 1/4 tsp. ground coriander
  • Optional – 1/4 tsp. red pepper flakes

Instructions

  1. About 30 minutes before you’re ready to cook the pork chops, set them out on the counter to come to room temperature.
  2. Preheat your smoker to 225°F.
  3. Drizzle the olive oil and seasonings onto the pork chops and massage them all over the meat.
  4. Place the pork chops onto the smoker and smoke for about 75-90 minutes, or until the chops reach an internal temperature of 145°F. You’ll want to flip them halfway in between cooking.
  5. Let the pork chops rest for 10 minutes before serving. Serve as they are or with a side of my smoky sweet and spicy BBQ sauce.
