DESCRIPTION

This Sausage and Rice Skillet is easy to put together and is bursting with amazing Cajun flavors. It’s a one-pan meal that the whole family will love!


Ingredients

  • 1 Tbsp. cooking oil
  • 1 lb. andouille sausage, in 1/4-inch slices
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 ribs of celery, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp. salt
  • 1/2 tsp. Cajun seasoning*
  • 1 (14.5 oz.) diced tomatoes
  • 1 and 1/2 cups chicken stock
  • 1 cup uncooked long-grain white rice
  • 2 Tbsp. tomato paste
  • 2 green onions, chopped

Instructions

  1. In a very large skillet, heat the oil over medium-high heat. Arrange the sausage in a single layer, with as little overlapping as possible.. Let cook untouched until browned underneath, about 3 to 4 minutes.
  2. Stir in the onion, bell pepper, celery, garlic, salt, and Cajun seasoning. Continue cooking, stirring occasionally, until the vegetables are tender, 5 to 6 minutes.
  3. Stir in the tomatoes, stock, rice, and tomato paste. Bring to a boil over high heat. Reduce to low so that it’s at a gentle simmer. Cover and let cook until the liquid is absorbed and the rice is tender, 20 to 25 minutes.
  4. Remove from the heat and stir. Top with green onion.

Notes

*If you don’t have Cajun seasoning and don’t want to make up a batch, don’t worry. You can use 1/4 teaspoon onion powder, 1/4 teaspoon paprika, and then a dash of cayenne pepper instead.
