Christmas Charcuterie Board Recipe

DESCRIPTION

Make a beautiful charcuterie board, perfect for Christmas parties or snacking on while decorating the tree.
This recipe is designed for a 10-inch platter or serving board. For larger platters or serving boards, the recipe can be easily doubled, tripled, or quadrupled.


Ingredients

  • 1/4 cup jellied cranberry sauce
  • 6 dashes hot sauce
  • 8 oz. plain goat cheese
  • 1/2 cup minced fresh parsley
  • 1 and 1/4 cup shelled pistachios, divided
  • 8 thin slices Swiss cheese
  • 8 thin slices Genoa salami or pepperoni
  • 8 thin slices prosciutto or other cured meat
  • 20 assorted seed crackers
  • 1 cup fresh raspberries
  • 1/2 cup yogurt-covered cranberries

Instructions

  1. In a small bowl stir together cranberry sauce and hot sauce until smooth. Transfer to a small Ramekin.
  2. Place Ramekin near the corner or edge of charcuterie board or platter.
  3. Finely chop ¼ cup of the pistachios. Transfer to a small bowl. Stir in parsley until well combined.
  4. Form goat cheese into a ball; roll in parsley mixture until evenly covered. Transfer ball to platter, opposite of cranberry sauce.  
  5. Arrange crackers around edge of board or platter on either side of mustard.
  6. Add Swiss cheese around edge of board, next to goat cheese.
  7. Add meats and raspberries in middle of board or platter.
  8. Fill in spaces with remaining 1 cup of pistachios and yogurt-covered cranberries.
