DESCRIPTION
Make a beautiful charcuterie board, perfect for Christmas parties or snacking on while decorating the tree.
This recipe is designed for a 10-inch platter or serving board. For larger platters or serving boards, the recipe can be easily doubled, tripled, or quadrupled.

- 1/4 cup jellied cranberry sauce
- 6 dashes hot sauce
- 8 oz. plain goat cheese
- 1/2 cup minced fresh parsley
- 1 and 1/4 cup shelled pistachios, divided
- 8 thin slices Swiss cheese
- 8 thin slices Genoa salami or pepperoni
- 8 thin slices prosciutto or other cured meat
- 20 assorted seed crackers
- 1 cup fresh raspberries
- 1/2 cup yogurt-covered cranberries
Instructions
- In a small bowl stir together cranberry sauce and hot sauce until smooth. Transfer to a small Ramekin.
- Place Ramekin near the corner or edge of charcuterie board or platter.
- Finely chop ¼ cup of the pistachios. Transfer to a small bowl. Stir in parsley until well combined.
- Form goat cheese into a ball; roll in parsley mixture until evenly covered. Transfer ball to platter, opposite of cranberry sauce. Â
- Arrange crackers around edge of board or platter on either side of mustard.
- Add Swiss cheese around edge of board, next to goat cheese.
- Add meats and raspberries in middle of board or platter.
- Fill in spaces with remaining 1 cup of pistachios and yogurt-covered cranberries.
