  • 1/2 cup fresh cilantro with tender stems, divided
  • 4 cocktail onions

Instructions

For the Caprese Skewers:

  1. With the pointed end of one of the wooden skewers, pierce the center of one of the mozzarella balls, push ball toward the blunt end of the skewer, leaving about ¼-inch of the skewer exposed.
  2. Add a basil leaf, followed by a tomato, another basil leaf, another mozzarella ball, another basil leaf, and another tomato, pushing each up toward the top of the skewer.
  3. Repeat process with remaining ingredients to create the additional skewers.

For the Caesar Skewers:

  1. With the pointed end of one of the wooden skewers, pierce the center of one of the anchovy fillets, push fillet toward the blunt end of the skewer, leaving about ¼-inch of the skewer exposed.
  2. Add lettuce leaves, followed by crouton, pushing each up toward the top of the skewer.
  3. Dip one side of skewer into Caesar dressing; dip side with dressing into parmesan cheese.
  4. Repeat process with remaining ingredients to create the additional skewers.

For the Shrimp Fajita Skewers:

  1. Dredge shrimp in fajita seasoning and set aside.
  2. With the pointed end of one of the wooden skewers, pierce the center of one of the pieces of green pepper, push pepper toward the blunt end of the skewer, leaving about ¼-inch of the skewer exposed.
  3. Add shrimp, one quarter of the cilantro, and one cocktail onion, pushing each up toward the top of the skewer.
  4. Repeat process with remaining ingredients to create the additional skewers.
