I’m not normally really a gadget person in the kitchen. But when it comes to making a full meal in 35 minutes, and I don’t have to turn on the oven, stovetop, OR grill, count me in. This air fryer dinner that’s got chicken with potatoes and green beans is a cinch to make when I’m short on time and it’s a healthy option, too.

I recently discovered how to make chicken breasts in the air fryer and they’re wonderful. They have skin that’s a bit crisp, but the inside is flavorful and juicy. So I got to thinking, why couldn’t I make a full meal in the air fryer, all at once?

I love to make a meal in the Instant Pot, this chicken and rice dinner is great. So, I thought I’d start out with something simple and classic, with ingredients I always have on hand: chicken, potatoes, and green beans.

Making A Chicken Dinner In The Air Fryer

The trick to making this work is to layer each component. I like to start with the potatoes on the bottom. The juices from the chicken drip down and give them an incredible flavor.

The chicken is laid on top of a rack which lets the air circulate all around it, cooking it through. It’s important to use an air fryer rack that fits just inside of the air fryer.

Once you have everything layered inside of the air fryer, all you have to do is slide the tray in, and wait for the timer to ding. Dinner in a flash!

DESCRIPTION

Making dinner in the air fryer is a breeze with this air fryer chicken with potatoes and green beans. Everything is cooked in the air fryer for convenience and quickness.


Ingredients

  • 2 cups diced, gold potatoes
  • 1 tsp. olive oil
  • 1 and 1/2 tsp. salt, divided
  • 1 tsp. pepper, divided
  • 1 lb. boneless, skinless chicken breasts
  • 1/2 lb. green beans

Instructions

  1. Toss the potatoes with the olive oil, 1 teaspoon of the salt, and 1 teaspoon of the pepper.
  2. Place the potatoes in the bottom of the air fryer tray and arrange a metal rack on top of them.
  3. Sprinkle both sides of the chicken with the remaining salt and pepper and place them on top of the metal rack over the potatoes.
  4. Slide the tray into the air fryer and set the temperature to 380 F. Turn the timer to 15 minutes.
  5. After the 15 minutes is up, slide the tray out and arrange the green beans over top of the chicken.
  6. Slide the tray back into the air fryer and cook for an additional 5-7 minutes, or until the green beans are just tender. Remove the green beans and chicken from the air fryer.
  7. If desired, place the potatoes back in for 3-5 minutes if you like a crispier potato. Serve!

Notes

  • This recipe works best with air fryers that include or can operate with a metal rack inside of the tray.
