Asparagus is one of my all-time favorite vegetables. It cooks up quickly and is really versatile.

Have you ever noticed that asparagus adds a certain fanciness to any meal where it appears? I’m not sure if it’s because of the delicate fronds on top or that it was a relatively rare vegetable in the United States until more recently. Whatever the reason, adding this veggie to anything will add some wow factor.

I think because of the fanciness reason, I particularly love appetizers that include asparagus. One of my all-time favorite appetizers to make is this simple Quick-Roasted Asparagus with Parmesan.

A delicious appetizer made of quick-roasted asparagus, Parmesan cheese, olive oil, salt and pepper. Simple flavors have never been so good!

I also like adding asparagus to quick weeknight meals, like this sheet pan dinner, to simply elevate an otherwise normal Wednesday night.
