The 4th of July is behind us now – Bang! Was that ever fun! But now it’s time to settle into the rest of summer. If you’re like me, you’ll be busy working all day, as usual, and then, in the evening, trying to soak up as much sunshine as you can. We spend a lot of time outside, riding bikes together, in the pool or just lounging around watching the kids play. The happy sun-dusted faces of my kids are my favorite thing to see.
With all that outdoor fun, it can be tough to fit in dinner-cooking-time. I try to remind myself in the summer to keep the plans simple, because I’m not going to want to cook much. I use fresh ingredients and try to choose recipes that are quick to make.
