Asian Pulled Pork Sliders: A Make-Ahead Recipe for Tailgating

Welcome to my future tailgating experience, where I’ll be featuring healthy and family-friendly Asian pulled pork slider sandwiches. I teamed up with Produce For Kids to bring you this recipe.
Do you go tailgating?
Or at least, I haven’t. But I’m determined to try it this fall. J’s school is doing a Trunk or Treat evening before Halloween and I’m gong to bring some food to serve to the happy little monsters, ladybugs, and Spidermen (and to their parents).
When I first decided to do this, I was perplexed about what to serve.
Do I need to cook it on site? Do I bring our grill? Will it fit in my Saturn Ion? Oh gosh! I’ll also need to fit in a cooler for the ice-packed raw meat!
My head was spinning like a poltergeist’s just thinking about all the TVs I’d have to jump through to pull it off.
You simmer pork tenderloins in sauce for a short time (just until cooked through) and then use forks to pull the meat (this is the only time-consuming part of the recipe). The shredded meat goes back into the sauce. You can serve it immediately or cool it to re-heat at a later time. Then you pile the meat onto the bottom of a whole wheat roll, add an easy Asian slaw and then the top of the bun.
I’m going to put the warm fully-cooked pulled pork and sauce into an aluminum container inside of a cooler, along with a few hot water bottles to keep it all nice and steamy.
No worrying about raw meat in the parking lot for me! (Tell me, am I a tailgating cheater or is this a standard way to go about it?)
The only other things I’ll need are some split burger buns, the chilled Asian slaw that tops the sliders, plates, napkins and LOTS AND LOTS OF HALLOWEEN TREATS!
