How To Bread Chicken Breasts

To bread chicken breasts perfectly, you’ll want to start by pounding them out to an even thickness. This helps them cook at an even rate, so some parts don’t overcook while you wait on the rest. For extra juicy chicken, you can also brine the breasts before you do this. Here’s a link that will walk you through how to brine chicken. This step is optional, but it does help keep the chicken really juicy and ensures every bite of chicken is full of flavor. If you do choose to brine your chicken, keep in mind that it adds salt to the chicken so you won’t need to add more to your breading. If you do, they can end up too salty.

Once your chicken is pounded to an even thickness, coat it in flour seasoned with a little salt and pepper, then dip it into some beaten egg. This will form a “glue” that helps the breadcrumbs stick.

Next, press the chicken into a plate of seasoned bread crumbs mixed with shredded Parmesan cheese.

Pan Frying Breaded Chicken Breasts

First, heat some olive oil in a skillet. You’ll know it’s ready when a few breadcrumbs dropped into the pan immediately begin to sizzle. Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup flour
  • Salt
  • Pepper
  • 2 eggs
  • 1 cup Italian seasoned bread crumbs
  • 1/4 cup shredded Parmesan cheese
  • Olive oil

Instructions

  1. Start by pounding the chicken breasts to an even thickness. I like mine to be about 1/2-inch thick.
  2. Next, set up your breading station: Add the flour to a shallow dish and season with salt and pepper. Add the eggs to a second dish and beat them well. Add the breadcrumbs and cheese to a third dish and stir to combine.
  3. Working with one piece of chicken at a time, dip each piece of chicken into the flour mixture, then into the egg, and finally into the breadcrumbs. Press down gently to make sure every part of the chicken is evenly coated.
  4. Heat 1/4-inch of oil in a skillet set over medium-high heat. When the oil is hot, add the chicken, working in batches if needed so you don’t crowd the pan.
  5. Cook the chicken until the breading is golden and crisp and the meat is cooked through, about 3 minutes per side.
  6. Chicken can be kept warm in a 250°F oven.
