Nutty Apple Pancakes Recipe

Helo Breakfast-Loving Friend. Today I’m partnering with Produce for Kids to tell you about my Nutty Apple Pancakes recipe. All thoughts in this post are my own.

These pancakes are a healthy breakfast inspired by the flavors of fruitcake. They’re also a really easy make-ahead breakfast to have in the freezer for busy weekday mornings.

The holiday season is such a whirlwind, isn’t it? I can’t really give you advice on how to cope with it all since I’m feeling the effects myself. But I can say that planning ahead whenever possible makes a difference.

That’s why I came up with this nutty apple pancakes recipe that has all the flavors of fruitcake. How do these pancakes help with your holiday whirlwind? You can make them ahead of time!

That’s right, this is a recipe for make-ahead pancakes!

Here’s what you do. When you find yourself with half an hour free on the weekend, make the pancake batter and cook up the pancakes on your favorite griddle. Transfer the pancakes to a large pan once they’re cooked. They’ll cool off on there. Once they’re cool, wrap each one in plastic wrap and then put them all into a freezer bag and into the freezer.

For your quick but festive weekday breakfast, unwrap a frozen pancake or two per person and put them into the toaster just until warmed through. Serve them with maple syrup. Or if you’re in a real hurry, wrap each one in a paper towel and have a festive munch together in the car.
