Day #1 Avgolemono Soup and Crunchy Greek Veggies | • Quick Avgolemono Soup • Raw bell peppers and cucumbers cut up and topped with feta cheese and Greek dressing. |
Day #2 Baked Tilapia served with Farro and Fennel | • Bake Tilapia • Farro cooked according to package directions. Make twice as much as you need for use on Day #4. • Roasted Fennel (Don’t roast the whole bulb because you’ll need some raw for Day #4) |
Day #3 Shrimp and Greek Roasted Potatoes | • Shrimp, cooked either on the grill, air fryer, or sautéed with garlic. • Greek Lemon Potatoes • Greek Salad made with lettuce, tomatoes, cucumbers, olives, and feta cheese with Greek dressing. |
Day #4 Chicken Farro Bowls | • Cooked chicken (rotisserie or baked like this) served over the leftover farro from Day #2, heated up and topped with thinly sliced raw fennel and some fennel fronds, chopped tomatoes, green olives, and drizzled with Rouille sauce to which you’ve added some lemon zest. |
Day #5 Steak, Asparagus and Lemony Garlic Bread | • Perfectly Cooked Steak • Roasted (but use feta instead of Parmesan), or Grilled or Air Fried Asparagus • Lemon Garlic Bread |
