The meal plan for this week features five meals that are easy and well-loved. We are cooking Chicken Cordon Bleu Stacks that we will use twice, as well as the easiest shrimp tacos ever.

Day and Meal Names | Links and Instructions |
Day #1 Zuppa Toscana | • Instant Pot Zuppa Toscana, but with Farro cooked in the Instant Pot instead of potatoes (make twice as much Farro as you need to use on Day #3). If you don’t have an Instant Pot here is a recipe for Zuppa Toscana cooked on the stove. I also have a recipe for 15-Minute Zuppa Toscana cooked on the stove. |
Day #2 Chicken Cordon Bleu Stacks with Spinach Salad and Baked Potatoes | • Chicken Cordon Bleu Stacks (make extra for Day #3). • Baked Potatoes cooked in the oven, or you can cook them in the microwave. Make twice as many as you need to use on Day #5. • Salad made of baby spinach leaves and topped with chopped cucumbers and tomatoes and store-bought salad dressing. |
Day #3 Farro Chicken Bowls | • Heat up the leftover farro. Stir in baby spinach leaves so that they wilt from the heat. Divide into soup bowls and top with heated up, sliced leftover Chicken Cordon Bleu Stacks. Finish with diced tomatoes and cucumbers, and serve with or without store bought salad dressing. |
Day #4 Easiest Shrimp Tacos | • Easiest Shrimp Tacos, you can buy the shrimp pre-cooked and heat them up, or cook them like this. • Add chopped fresh mango to the tacos, or serve it alongside. |
Day #5 Poutine Baked Potatoes and Oven Baked Ribs | • Poutine Baked Potatoes made with the leftover baked potatoes from Day #2. • Oven Baked Ribs • Microwaved Frozen Peas |
