The meal plan for this week features five meals that use Easter leftovers. Spaghetti Carbonara is a great way to use up ham and Egg Salad will put the Easter eggs to good use!

Day #1 Green Pea Soup with Ham and Garlic Knots | • 15-Minute Green Pea Soup with Ham made with frozen peas. • Serve with leftover rolls or buns from Easter. Or, you can make Garlic Knots. |
Day #2 Spaghetti Carbonara and Air Fryer Broccoli | • Spaghetti Carbonara. You can use leftover ham or bacon instead of pancetta. If you do that, just skip the step where you crisp it. • Air Fryer Broccoli |
Day #3 Egg Salad Sandwiches and Arugula Salad | • Egg Salad with Chopped Bacon Sandwiches • Arugula Salad with tomatoes. Chop up tomatoes and put them in a bowl with salt and push them down to release the juices. Let them sit a bit before adding olive oil, black pepper, and chopped garlic. Scoop them over the arugula leaves as a dressing. |
