The meal plan for this week features five meals that are mostly low-carb. You’ll enjoy Zuppa Toscana with cauliflower rice instead of potatoes and an easy and quick dinner of Sheet Pan Sausage, Sweet Potato, and Asparagus.

|• Zuppa Toscana, but instead of potatoes stir in 2 cups of frozen store bought cauliflower rice.|

Italian Chicken Breasts with Pesto Zoodles
|• Italian Chicken Breasts. Make twice as much for use on Day #5.|
• Zoodles (raw) tossed with pesto.
Sheet Pan Sausage, Sweet Potato and Asparagus
|• Sheet Pan Sausage, Sweet Potato and Asparagus dinner|
One-Pan Shrimp and Asparagus
|• One-Pan Shrimp and Asparagus. |
• Can be served with left over zoodles or cucumber salad.
Italian Chicken and Cauliflower Rice Bowl
|• Heat left over Italian Chicken Breasts from Day #2 and serve over warmed up frozen cauliflower rice. Top with any leftover zoodles, chopped red onions, tomatoes, and cucumber. Sprinkle with shredded Parmesan cheese and drizzle with store bought Italian dressing.|
