Day #1 Zuppa Toscana | • Zuppa Toscana. You can substitute farro for potatoes in the soup. • Oven Toasted Bread. I always have this brand in my freezer. Heat up the bread in your Air Fryer at 360 degrees for 7 1/2 minutes. |
Day #2 Chicken Thighs with Tomatoes, Basil and Red Chilies | • Baked Chicken with Tomatoes, Basil, and Red Chilies – make a double batch for use on Day #4. • Double-batch of Farro for use on Day #4. • Green Salad of salad greens, green bell pepper, and store bought Italian dressing. |
Day #3 Shrimp Tacos | • The Easiest Shrimp Tacos (Buy cooked shrimp or cook them from frozen like this). |
Day #4 Italian Chicken Burrito Bowls | • Reheat the leftover farro from Day #2. Reheat the remaining chicken from Day #2. Arrange heated farro and chicken in soup bowls. Top with shredded mozzarella cheese, heated up tomato sauce, chopped up green bell pepper, grape tomatoes, and salad greens. Drizzle with Italian dressing. |
