The meal plan for this week features five meals with French Influences. Even though we might think French food is fancy and finicky though, this meal plan actually features two French sheet pan dinners and two 15-minute soups so meal prep is quick and easy!

Day #2 15-Minute French Onion Soup and Lentil Salad | • 15-Minute French Onion Soup • Quick Lentil Salad: This salad is inspired by Emily Paster’s French Lentil Salad, but this preparation is much quicker. Mix drained and rinsed canned lentils with chopped green bell peppers, chopped zucchini, olive oil, salt and pepper. Top with crumbled goat cheese. Make a little extra for Day #4. |
Day #3 Spatchcock Chicken with Potatoes and Asparagus | • Sheet Pan Dinner: Spatchcock Chicken with Potatoes, Asparagus, and Lemon |
Day #4 French Rice Bowls | • Reheat the leftover rice from Day #1. Reheat the remaining chicken from Day #3. Arrange heated rice and chicken in soup bowls. Top with leftover lentil salad, more goat cheese, supremes of an orange and some fennel fronds (You’ll have fennel for the Bouillabaisse on Day #5. Use the light wispy greens from the top). |
