The meal plan for this week features meals that use very few dishes. You’ll see how you can use a roast chicken for three different meals, and how a charcuterie board can be what is for dinner!

Day and Meal Names | Links and Instructions |
Day #1 Roast Chicken with Pan Roasted Vegetables | • Prepare a Roast Chicken. You’ll want enough meat for 3 meals, so prepare 2 roast chickens if necessary. • Roast small potatoes, broccoli, and baby carrots (make sure potatoes and broccoli are cut to roughly the same size as the baby carrots) on a sheet pan with olive oil, salt, and black pepper. Roast them at 450F while the chicken rests. |
Day #2 Chicken Rice Bowls | • Make a big batch of rice. You’ll want enough for Day #4. • Put rice in a bowl and top with some warmed up chicken from Day #1. Top the chicken and rice with a bagged salad (your choice) and some sliced cheese that has been chopped up. |
Day #3 Ramen Soup with Ham, Chicken, and Veggies | • Cook ramen according to the package directions. Add some chopped ham, chicken from Day #1, broccoli, carrots, and shredded cabbage to the broth and cook until tender. |
Day #4 Teriyaki Shrimp with Stir-fried Rice and Veggies | • Cook shrimp from frozen according to these directions. Once the shrimp is cooked, drain and toss with some teriyaki sauce mixed with honey. • Stir fry the leftover rice from Day #2 with shredded cabbage, soy sauce, and then sprinkle with chopped up almonds. |
Day #5 Charcuterie Board and Salad | • Use this guide to put together your Charcuterie Board. You already have ham and one cheese, so you’ll need another cured meat (like salami) and another sliced cheese, as well as some goat cheese or paté, grapes, crackers and small bowl of mustard.
