This week’s meal plan incorporates your weekend’s leftovers, if you have some, into the week’s meals. But, the recipes are simple to make if you don’t have leftovers too!
After a long weekend, it can be hard to get back to the regular routine. There are sometimes leftovers in the fridge, or there are sometimes empty shelves in the fridge, among other issues. Right? The meal plan this week features recipes that you can easily work your leftovers into, if you have them. But, the recipes are simple enough that you can make them from fresh without leftovers too. Really, simple is what we need right now. I hear you.

Avgolemono Greek Lemon Soup and Salad
|• 15-Minute Avgolemono Soup (use leftover chicken, pork, or seafood instead of the rotisserie chicken if you have some. If you have any grain, rice, or pasta leftover, use that for the tube pasta)|
• Serve with a salad of iceberg lettuce, tomato, bell pepper, cubed zucchini, and goat cheese, with store-bought dressing.
Pizza Stuffed Peppers and Corn on the Cob
|• Pizza Stuffed Peppers (or mix up some of your fully-cooked meat and/or vegetable and/or grain leftovers with some shredded cheese and use that as a filling. Follow the instructions for cooking the stuffed peppers but with your filling instead of the pizza filling)|
• Serve with microwaved corn on the cob (microwave instructions, or try grilled corn on the cob, or air fryer corn on the cob) topped with butter and salt
