Meal Prep Party Instructions:
As noted, our podcast this week was all about hosting a meal prep party. To that end, I thought it would be helpful to quickly walk you through how to use the above recipes as Meal Prep Party recipes. Also, be sure to check out Heather’s tips for hosting a meal prep party over here. Okay, here we go!
One Pot Pasta: Season and cook the chicken. Package that into bags and seal them. Saute the onions and garlic. Put those into bags and then add the chicken stock and cream. When ready to cook this recipe, they should defrost the two bags of food in the fridge overnight. Then transfer the broth mixture into a pot and bring to a boil. Add the pasta and follow the rest of the recipe, adding in the cheese and the chicken at the end to heat it through. While it’s all cooking, make a salad.
Chili: Saute the onions and cook the beef and pork. Transfer that to bags. Add the salt, unheated diced tomatoes, tomato sauce, chipotles, chili powder, garlic powder, and kidney beans. Seal the bags. When ready to cook this recipe, defrost the bag in the fridge overnight. Transfer it to a pot and bring to a boil. Reduce heat to a simmer and cook for 10 minutes. While it’s cooking, make the garlic bread.
Greek Stuffed Peppers: Cook the rice. Chop up the raw chicken. Make the chicken and rice filling. Fill the peppers. Then, either cook them and package them up for quick microwave meals, or package them raw to freeze. If frozen, defrost in the fridge overnight and then cook according to the recipe (35-40 minutes at 400F making sure the filling is at least 165F on an instant read thermometer).
Chili Enchiladas: I wouldn’t make these at the meal prep party. Instead, I would share the instructions for how everyone can turn their leftover chili into this recipe for an additional meal made from the chili.
Tropical Salmon: Rub the raw salmon with the chili powder and salt and package it into bags. Cook the rice and beans mixture and package that into a second set of bags. Make the mango salsa and package that into a third set of bags. When ready to cook this recipe, defrost all three bags in the fridge over night. Cook the salmon in a skillet according to the recipe instructions. While it’s cooking, heat the rice mixture. Divide rice among plates, top with cooked salmon and mango salsa.
