One Pan Spatchcock Chicken with Potatoes and Asparagus
|• This recipe has the chicken, potatoes, and veg all cooked on one pan.|
Gallo Pinto with Fried Eggs and a Fridge Salad
|• Gallo Pinto (Costa Rican rice and beans)|
• Fridge Salad: Make a big bowl of crunchy veggies that you like (bell peppers, cucumbers, carrots, celery, sugar snap peas, broccoli, cauliflower, etc.) mixed with a bit of Italian or other dressing. Feta cheese or shredded cheese is optional but always delicious ;). Make enough of the fridge salad to have for three days.
Quickest Chicken and Cheese Stuffed Peppers with Fridge Salad
|• Stuffed Peppers|
• Serve with leftover fridge salad.
|• Instant Pot Beef Stroganoff (or Slow Cooker Beef Stroganoff or one of these stroganoff variations)|
• Serve with the last of the fridge salad.
Air Fryer Chicken Fajita Dinner
|• Air Fryer Chicken Fajitas (or do Air Fryer Steak Fajitas or Grilled Steak Fajitas or Vegetarian Fajitas)|
• Use store-bought toppings like sour cream, salsa, guacamole, shredded cheese, etc., if desired.
