On Episode #3 of my podcast, TMI with Christine, I share a meal plan that is all one pan dinners so that you can just focus on one thing while in the kitchen, and maybe relax a little. It’s an easy and delicious plan that I think you’ll love!
Day #1: One Pan Spatchcock Chicken with Potatoes and Asparagus
Day #2: Gallo Pinto with Fried Eggs and a Fridge Salad
Fridge Salad: Make a big bowl of crunchy veggies that you like (bell peppers, cucumbers, carrots, celery, sugar snap peas, broccoli, cauliflower, etc.) mixed with a bit of Italian or other dressing. Feta cheese or shredded cheese is optional but always delicious ;). Make enough of the fridge salad to have for three days.
Day #3: Quickest Chicken and Cheese Stuffed Peppers with Fridge Salad
Serve with leftover fridge salad.
Day #4: Beef Stroganoff
Serve with the last of the fridge salad.
Day #5: Air Fryer Chicken Fajita Dinner
Use store-bought toppings like sour cream, salsa, guacamole, shredded cheese, etc., if desired.
