Meal Plan #23: Vegetable-Forward Meals
On Episode #23 of my podcast, TMI with Christine, I talk with Amber Gray of Healthy Family Project about how her life has shifted since having a baby, specifically her food and cooking routines. The meal plan for this week is inspired by our conversation and includes vegetable-focused recipes that your whole family will love.
Here is this week’s meal plan:
Day #1: 15-minute Greek Fish Soup and Tzatziki
Day #2: Sheet Pan Sausage, Sweet Potato, and Asparagus Dinner
Day #3: Hidden Veggie Turkey Meatballs in Asian Sauce with Rice and Salad
Hidden Veggie Turkey Meatballs (make twice as many as your family needs to use on Day #5)
Salad: Lettuce, cherry tomatoes, and cucumbers with store-bought dressing.
Day #4: Greek Rice Bowls
(Use the leftover rice from Day #3, leftover tzatziki from Day #1)
Day #5: Spaghetti and Meatballs with Salad
Use the leftover meatballs prepared on Day #3. Mix them with marinara sauce and warm them up. Serve with cooked spaghetti noodles.
Salad: Lettuce, cherry tomatoes, cucumber, bell peppers, feta cheese, salad dressing.
