Meal Plan #22: Five Convenient Meal Types For Dinner This Week
On Episode #22 of my podcast, Time Management Insider, I talk with Heather McCurdy from Real: The Kitchen and Beyond about using systems to organize our cooking lives. The meal plan for this week is inspired by our conversation and features five different dinner types that are all systems for streamlining your cooking. It’s a delicious meal plan that that your whole family will love.
Here is this week’s meal plan:
Day #1: 15-Minute Broccoli Cheese Soup with Croutons, Served with Raw Veggies
Serve with raw sugar snap peas, sliced cucumbers, and cherry tomatoes.
Day #2: Sheet Pan Lemon Chicken and Polenta Dinner
Day #3: Bacon-Wrapped Shrimp, Rice, Sauteed Sugar Snap Peas
Sauteed Sugar Snap Peas: Heat 1 tablespoon of olive oil over medium heat in a large skillet. Add 3 cups of sugar snap peas and 1/2 teaspoon of salt. Stir to coat in oil and salt. Cook until heated through but still tender-crisp, about 4-6 minutes.
Day #4: One Pot Philly Cheesesteak Pasta with Broiled Zucchini
Broiled Zucchini Recipe. Make extra to have on Day #5.
Day #5: Kielbasa Burrito Bowl
Warm up the leftover rice from Day #3. Slice a ring kielbasa into 1/2 inch slices and mix it with 1 and 1/2 cups of sauerkraut. Caraway seeds are a delightful thing to add here! Go with 1/4 teaspoon and see what you think. Heat the kielbasa mixture up in the microwave or brown it all lightly in a skillet on the stovetop. Put the warmed rice into soup bowls. Top with the kielbasa mixture as well as with some sliced cucumbers, cherry tomatoes, and leftover chunks of broiled zucchini (warm or cold) from Day #3. You can also add sliced green bell peppers and mushrooms if you have some leftover from Day #4.
