Day #3 Bacon-Wrapped Shrimp, Rice, Sauteed Sugar Snap Peas | • Bacon-Wrapped Shrimp In The Air Fryer (or use this recipe for Bacon-Wrapped Shrimp In The Oven) • Rice (Instant Pot instructions here). Make extra for Day #5. Note that instead of rice, you can use farro, quinoa, or cauliflower rice. • Sauteed Sugar Snap Peas: Heat 1 tablespoon of olive oil over medium heat in a large skillet. Add 3 cups of sugar snap peas and 1/2 teaspoon of salt. Stir to coat in oil and salt. Cook, stirring often, until heated through but still tender-crisp, about 4-6 minutes. |

Day #5 Kielbasa Burrito Bowl | • Warm up the leftover rice from Day #3. Slice a ring kielbasa into 1/2 inch slices and mix it with 1 and 1/2 cups of sauerkraut. Caraway seeds are a delightful thing to add here! Go with 1/4 teaspoon and see what you think. Heat the kielbasa mixture up in the microwave or brown it all lightly in a skillet on the stovetop. Put the warmed rice into soup bowls. Top with the kielbasa mixture as well as with some sliced cucumbers, cherry tomatoes, and leftover chunks of broiled zucchini (warm or cold) from Day #3. |
