Meal Plan #19: New Easy Recipes
On Episode #19 of my podcast, TMI with Christine, I talk with Danielle Green from The Creative Bite about her experiences with a variety of meal kit companies. The meal plan for this week is inspired by our conversation and includes some new and exciting recipes to try. It’s a delicious plan that your whole family will love!

Here is this week’s meal plan:
Day #1: Greek Lemon Chicken Sheet Pan Dinner with Pita, Tzatziki, and Fridge Salad
Greek Lemon Chicken Sheet Pan Dinner Recipe
Tzatziki Recipe (note that the recipe is at the bottom as part of another recipe there, or buy some already made)
Store-bought Pita Bread
Fridge Salad: Make a big bowl of crunchy veggies that you like (choose 3-4 of: bell peppers, cucumbers, carrots, celery, sugar snap peas, broccoli, cauliflower, etc.) mixed with a bit of Italian or other dressing. Make enough of the fridge salad to have for three days.
Day #2: Chicken Curry with Rice and Fridge Salad
Rice: Made however you’d like. Here are instructions for in the Instant Pot. Make enough for two meals for your family.
Pita bread, if you have some left from Day #1.
Fridge Salad: Leftover from Day #1.
Day #3: Shrimp Gumbo with Andouille Sausage and Rice
Quick Shrimp Gumbo with Andouille Sausage Recipe
Stir the leftover rice from Day #2 into the gumbo as well.
Day #4: Salsa Chicken with Fridge Salad and Tortillas
Fridge Salad: Leftover from Day #1.
Soft flour or corn tortillas to fill with sliced salsa chicken and the fridge salad too.
Day #5: Caprese Grilled Cheese Sandwiches
