The holiday season has arrived and today I’ve partnered with Herndon Country Farms to tell you about the perfect holiday salad recipe for when you gather your friends and family around the table.
Have you seen these onions at your grocery store?
They’re small globes of onion sweetness sold in bunches with the greens still attached. These ones are called Lil’ Bo’s Petite Sweet Vidalia Onions. I’m addicted to them and am so happy that they’re in season again and back on the shelves in the grocery stores.
These petite onions are salad onions with that classic sweet oniony bite. I like to add to their flavor with a bit of acid and sugar.
For this holiday salad recipe the onions are marinated in cider vinegar and sugar for a short time. Then the marinade is turned into a salad dressing, poured over top of greens, the onions, pomegranate seeds and goat cheese.
Head over to Herndon Country Farms to get the Lil’ Bo’s Petite Sweet Vidalia Onion, Pomegranate and Goat Cheese Salad Recipe.
Oh, and while you’re there, check out another delicious recipe that I made for French Roasted Onions.
What is your favorite festive holiday salad to make for friends and family? Tell me all about it in the comments section below.
Disclosure: Herndon Country Farms hired me to develop recipes using their petite sweet onions, to photograph the recipes and to write about them on my blog. All opinions are my own.
