Healthy Potato Salad with Greek Yogurt & Veggies

Healthy Potato Salad Made with Greek Yogurt and Veggies
Memorial day and the unofficial start to summer is just around the corner. In my house that means we start making potato salad. A lot of potato salad. I love the stuff. Crave it.

I especially love my mom’s potato salad recipe. But don’t get too excited. I can’t share that one. It’s a top secret recipe.

To be honest, it’s probably a good thing that I can’t share mom’s recipe with you since it’s seriously addictive. And seriously fattening. I’m not going to admit how much mayonnaise is in there!

Because of all that mayonnaise and all that addictiveness, I try to make my mom’s potato salad recipe on special occasions only. For regular days, I make a lighter versions.

Like this healthy potato salad recipe that I developed for Produce for Kids. It’s made with Greek yogurt instead of mayonnaise. And then there’s some mustard and some canned artichoke hearts to zing it up a bit. Asparagus, cherry tomatoes and onions are added for an extra vitamin punch.

This potato salad is so bright, fresh and healthy that you can have it any day. Or every day! All summer long!

Healthy Potato Salad Made with Greek Yogurt and Veggies

Why is my recipe over at the Produce for Kids site? Last year, Produce for Kids and I worked together to come up with family-friendly healthy recipes.
