If you’ve never had Goulash before, you’re in for a real treat. This is the traditional way to prepare a Hungarian style Goulash, with tender chunks of beef stew meat and lots of paprika in a rich, tomato-based sauce.

Goulash is traditionally served as a soup or stew in a bowl. But I’ve been noticing that Goulash in the United States (or something called Goulash, anyhow) often has noodles involved somewhere. I therefore decided to serve mine over egg noodles. If you’re feeling traditional, skip the noodles, use a bit more beef broth, and then serve it in bowls with a side of crusty bread instead.

This is the kind of dinner that I like to whip up in the middle of the week when I need a pick me up. It’s great because the sauce comes together quickly on the stove, and then you let it simmer for 20 minutes before starting on the noodles. While the sauce simmers, the beef gets really tender, and you have time to sit down and relax for a minutes after a long day.

After the sauce finishes cooking, you stir in some sour cream, which gives the dish a lovely richness in texture, but it really brightens everything up! If you’re a sour cream lover, serve the dish with a little extra dollop on top. You won’t be sorry.

I guarantee this is going to become a family favorite that you’ll want to make over and over again any time you need a helping of comfort food.

  • 1 Tbsp. olive oil
  • 1 cup diced yellow onion
  • 1 cup diced and peeled carrots
  • 1 cup diced green pepper
  • 1 lb. beef stew meat
  • 2 garlic cloves, minced
  • 2 tsp. sweet paprika
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 16 oz. tomato sauce
  • 6 oz. tomato paste
  • 1 cup beef broth
  • 1 (12oz.) bag of egg noodles
  • 1/4 cup sour cream


  1. Add the olive oil to a large pot or dutch oven over medium heat.
  2. Once the oil is hot, add the diced onion, diced carrot, and diced green pepper.
  3. Cook for 5-7 minutes, or until the vegetables begin to soften.
  4. Add the meat and cook for 5 before adding the garlic, paprika, salt, and pepper.
  5. Saute for 3 additional minutes and add the tomato sauce, tomato paste, and beef broth.
  6. Bring the mixture to a boil over medium heat, cover and reduce to a simmer.
  7. After the goulash has simmered for 20 minutes, boil a large pot of water for the egg noodles.
  8. Cook the egg noodles according to the package directions and drain.
  9. Remove the goulash from the heat and stir in the sour cream.
  10. Serve the goulash sauce over a bed of egg noodles, top with more sour cream if desired, and enjoy.
