This amazing cucumber salad is my go-to cold side dish for when company comes over, or for when I want to use up a cucumber or want an excuse to eat a cucumber!

This cucumber salad is so delicious that I can eat an entire cucumber’s worth myself. I’m not kidding. Seriously. I’ve done it.
On the topic of variations: My mom used to make something similar when I was young. She says hers has sugar in it. I’ve also read of people putting some vinegar, and of others adding sliced red onion. I’m sure all of these things are great but I like it as basic as possible.
So what’s in my killer cucumber salad? Sliced cucumber, lots of dill, and some sour cream (and go in with a bit of salt too). That’s it. Mix it up and eat it up.
Note that you can make this up to 5 hours ahead, then cover and refrigerate it. However, some liquid from the cucumbers will release into the sauce and make it thinner. That’s ok. It’s still good and some people actually prefer it that way.

Ingredients
- 1 medium English cucumber
- ½ cup fresh dill fronds
- ½ cup sour cream
- ¼ tsp. salt (optional)
Instructions
- Slice cucumber into ⅛-inch slices.
- Chop the dill.
- Measure the sour cream into a medium bowl. Add the cucumber and dill. Stir.
- Taste and add salt if desired.
