Cream soups are one of my favorite types of soups to serve as Fall starts to make its entrance.  They’re homey and reminiscent of times spent around the dinner table with family.  Cream of mushroom has to be my all time favorite, with cream of celery coming in a very close second.

I often feel a little sorry for celery.  It’s generally a component of some recipe along with carrots and onions or peppers or served as a vehicle for some tasty dip. It rarely gets to play center stage.

This classic cream of celery soup changes all of that.

It starts with a roux similar to the way that béchamel sauce is made, flavored with onions and a little salt, and then the star of the show goes into the stock and cooked until tender, pureed, and finished with rich whole milk.  I can hardly wait for a bowl.

I love celery, so I don’t mess around.  I start with a bunch that is about 2 pounds. Choose celery with tightly packed stalks that are not rubbery and don’t fan out too much.  The leaves should be a bright green color and not wilted.  Oh, and please don’t throw the leaves away. They make a perfect garnish.

Description

Serve this cream of celery soup with a great piece of bread for a simple and satisfying weeknight meal.

Ingredients

  • 5 Tbsp. butter
  • 5 Tbsp. flour
  • 1 medium onion, chopped
  • 1 tsp. salt
  • 4 cups low-sodium chicken broth
  • 5 cups chopped celery, about 2 pounds, reserve celery leaves for garnish
  • 1 cup milk
  • Fresh ground pepper

Instructions

  1. In a large saucepan melt the butter over medium heat, don’t allow to brown. Add the flour, cook, stirring for 3 minutes.
  2. Add the onions and salt, cook for 2 minutes.
  3. Add the broth and bring to a simmer, stirring occasionally to prevent the flour from sticking on the bottom.
  4. Once the broth has reached a simmer, add the celery and cook until tender, 15 – 20 minutes.
  5. Puree the soup in a blender or food processor until completely smooth, about 3 – 4 minutes. (You may need to do this in batches depending on the size of your blender or food processor.)
  6. Return the soup to the pan, add the milk and heat through.
  7. Serve garnished with celery leaves and pepper if desired.
