I’ve been enjoying my Lemon Chicken recipe so much that I decided to put a spin on it. In the process, I came up with a new family favorite that’s become part of my regular rotation—Coconut Lime Chicken Breasts.
And I think it might become part of your regular rotation too.
A Simple Sauce With A Lot Of Flavor
This is basically baked chicken breasts—which I love as well—dressed up with a simple sauce. Perhaps even better, the sauce is made from mostly pantry ingredients.
The ingredients? Coconut milk, salt, garlic powder, ground ginger, lime juice, and lime zest. That’s it. Just mix them up, pour the mix over the chicken, and bake.
Accessorize – Or Not
Most definitely, Coconut Lime Chicken Breasts are plenty flavorful right out of the oven.
Should you want to, however, you can accessorize them. For the photo, I added some chiles and cilantro. Other good garnishes include toasted coconut flakes, sliced scallions, or red pepper flakes.
Coconut Lime Chicken Any Night Of The Week
The simplicity of the sauce means it only takes about 10 minutes to get the chicken into the oven. That’s a plus for me on weeknights because then I have time to deal with other end-of-workday chores.
But it’s also a plus on weekends, when the simple sauce makes entertaining easy and the baking means I can enjoy family and friends instead of fussing in the kitchen.

- ⅔ cup coconut milk
- 1 tsp. salt
- ½ tsp. garlic powder
- ½ tsp. ground ginger
- 3 limes
- 4 (7-8 oz.) boneless skinless chicken breasts
Preheat the oven to 400°F.
Meanwhile, in a small bowl combine the coconut milk, salt, garlic powder, and ginger.
Zest 2 of the limes, then squeeze the limes to get 2 tablespoons of juice. Add the zest and juice to the coconut milk mixture. Slice the remaining lime and set aside.
Put the chicken in a baking dish smooth side up. Pour the coconut milk mixture on top.
Bake until the chicken is done but not yet browned, about 35 minutes, basting with the juices once or twice.
Tuck the lime slices on and around the chicken. Turn on the broiler and broil until the chicken is lightly browned, 2 to 3 minutes.
Serve the chicken with the lime slices and pan juices spooned on top.
