Cheesy Chicken and Rice Casserole

This classic Cheesy Chicken and Rice Casserole recipe is the comfort food at its finest. Chicken, rice, vegetables, cheese, and cream of chicken soup baked until bubbly and golden.

There’s nothing like coming home after a long day and digging into a steaming casserole fresh out of the oven. I love this one because you can use up leftover rice and chicken that you have on hand to make life even simpler. It’s important for me to have something hearty to feed my kids after a long day at school, and this certainly fits the bill.

Did I mention that this is soo simple? It’s cooked chicken, cooked rice, frozen vegetables (no chopping here), cream of chicken soup and cheese. About the cream of chicken soup, you can use store-bought, or you can make your own, here’s how I do it. It’s actually easier than you think.

This is a really versatile recipe. If you want to use turkey instead of chicken, go for it. Same goes for quinoa instead of rice. Use what you have on hand to make life a little easier.

Cheesy Chicken and Rice Casserole

DESCRIPTION

This classic Cheesy Chicken and Rice Casserole recipe is the comfort food at its finest. Chicken, rice, vegetables, cheese, and cream of chicken soup baked until bubbly and golden.


Ingredients

Units Scale
  • 1/2 small onion, diced
  • 12 oz. frozen, mixed vegetables, defrosted
  • 2 cups diced, cooked chicken
  • 2 cups cooked brown rice*
  • 2 + 1/2 cups condensed cream of chicken soup (about 2 cans)
  • 2 cups shredded cheddar cheese, divided
  • 2 Tbsp. unsalted butter, melted

Instructions

  1. Preheat the oven to 375F.
  2. To a large bowl add the onion, vegetables, chicken, brown rice, cream of chicken soup, 1 cup of the cheese, and the butter. Mix well.
  3. Spoon the mixture into a greased 9×13 casserole dish and top with the remaining 1 cup of cheese.
  4. Pop the dish into the oven for 25 minutes, or until heated through and the cheese is bubbling and browned. Serve.

Notes

  • any type of rice would work well here, and you can even use quinoa.
