Cheesy Rice with Broccoli Made in the Oven

Cheesy rice with broccoli is really simple and hands-free. Basic instructions for making plain rice in the oven are also given. Such a cool technique!

Do you ever get stumped on what to serve with dinner? Sometimes I get stuck serving the same side dishes over and over because I need something quick and easy on a busy night.

How To Make Rice In The Oven

One of my favorite quick side dishes to make is oven rice. Have you done this before? So easy. (You can also make rice in the Instant Pot!)

You set your oven to 350°F and put a kettle on to boil. Then measure a cup of long grain white rice into a small pot that has a tight-fitting lid. Add two cups boiling water and a bit of salt. Stir and then put the lid on. Pop it into the oven for 30 minutes and it comes out perfectly. Just fluff it with a fork and eat.

Because I like making oven rice so much, I’ve come up with different variations for it, like this Cheesy Rice with Broccoli. I originally created it for Produce for Kids’ cookbook Healthy Family Classics

It’s done in one pot in the oven, like the basic oven rice. It takes a bit longer than the basic recipe though and is cooked at a slightly higher temperature. This is because of the broccoli in the mix.

This recipe is pretty hands-free, and yet super-delicious. I also love that it’s healthy comfort food. You can never go wrong with that. Serve it with chicken or pork made with Homemade Shake n Bake like shown in the photo, or alongside your favorite protein.

Cheesy Rice with Broccoli in the Oven

  • 1 and 1/2 cups long-grain white rice
  • 2 cups finely chopped broccoli florets
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 2 and 3/4 cups boiling water
  • 1 cup shredded lowfat Cheddar cheese


  1. Preheat oven to 400ºF.
  2. Combine rice, broccoli, oil, and salt in a medium oven-safe sauce pan that has a tight-fitting lid.
  3. Add the boiling water. Stir.
  4. Cover and bake until rice is tender and water is absorbed, about 35 minutes.
  5. Fluff with a fork and gently stir in cheese.
