Cauliflower and Kale Pesto Pasta

Cauliflower and Kale Pesto Pasta Recipe


Pesto loaded with garlic, lemon, fresh herbs, nuts and olive oil makes me happy. I love making up a batch and having it on hand to add to pasta, stir into rice, smear on chicken or fish or toss with roasted vegetables.


It’s hard to think of any part of dinner that isn’t improved with a bit of pesto.

Since I like to use pesto in a lot of things, it occurred to me that it would be a good idea to boost the health factor of my basic pesto recipe. I was talking with Mallory from Produce for Kids about this one day. I said that I was planning to put kale in my pesto. She said, “You know what vegetable I love? Cauliflower. Could you sneak some of that in there too?”

What? Cauliflower? In pesto?

Well, I cooked up some cauliflower until it was really really soft and added it to my kale and herb mixture in the blender. And the result? Delicious! You can’t really taste the cauliflower but it adds this smooth creaminess to the pesto.

In this particular recipe, the Cauliflower and Kale Pesto is mixed with cooked macaroni and chickpeas to make a complete vegetarian pesto pasta dinner that comes together in the time it takes the pasta to cook. Quick, easy, healthy and tasty. I know you’ll love it!

    Love this — love the idea of blending cauliflower to make the pesto and that this is dairy free and can be made gluten free by using brown rice pasta : )
