Carrot, Basil and Cream Cheese Salad Dressing

Celebrate the flavors of summer with a Carrot, Basil and Cream Cheese Salad Dressing. It’s another great way to soak up those healthy nutrients. I developed this recipe in partnership with Produce for Kids.
One of my favorite things about being a recipe developer is when I get challenged by one of my clients. A food company might want a recipe that uses their product in a new way. Or they want me to focus on a certain season or style of cooking. This forces me to get creative and push my culinary imagination.
Recently, Produce for Kids asked me to use carrot juice in a recipe. I’ve never cooked with carrot juice before so I was intrigued. Then they said they didn’t just want any kind of recipe, they wanted a salad dressing recipe. A salad dressing with carrot juice? Really? It doesn’t immediately sound good, does it?
But I did a lot of brainstorming for this recipe. I thought about the flavors that go with carrots and I thought about summer.
What I’ve come up with is a pretty-colored dressing full of fresh flavors. It’s made with carrot juice and lots of fresh basil. Basil and carrot go really well together. You’ve gotta try the combination to taste how good it is. There’s also a big hit of fresh lemon juice in the dressing. And then the creamy ingredient, it had to be cream cheese.
Mmmm…carrots and cream cheese.
I knew it would be great. Better than great — we’ve already gone through three batches of it! This salad dressing tastes so good and looks really pretty in a bottle on the table.
