DESCRIPTION

You need this butter on your corn because it was specifically created with flavors that go perfectly with corn. It’s going to be the best corn on the cob you’ve ever had!

Ingredients

Units Scale
  • 3 strips uncooked bacon
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cloves garlic, roughly chopped
  • 1/4 cup packed fresh cilantro leaves
  • 1/4 tsp. chipotle chili powder*
  • 1/4 tsp. salt
  • Pinch of sugar

Instructions

  1. Put the bacon in a medium skillet set over medium heat. Cook, flipping occasionally, until crispy. Remove bacon from skillet. Pour bacon fat into a bowl but do not discard it.
  2. Measure the butter into a small chopper or food processor. Add the garlic, cilantro, chili powder, and salt. Drizzle in the reserved bacon fat and crumble in the cooked bacon.
  3. Pulse butter mixture until well combined.
  4. Use immediately or store in the refrigerator in a sealed container for up to 4 days or in the freezer for 2 months. Use 1 tablespoon of butter per cob of corn, or stir 1 tablespoon of the butter into 1 cup of hot corn to melt it in.

Notes

*If you don’t have chipotle chili powder, regular chili powder will work just fine.
