Buffalo Chicken Queso

Seven simple ingredients make this Buffalo Chicken Queso the tastiest twist on queso we’ve ever tried.

You might say that I have a thing for cheese. Especially melted cheese. Hot cheese. Gooey cheese. You know what I mean. The good stuff. It therefore shouldn’t surprise you that I’m a tad obsessed with warm and gooey, cheese-based dips.

Cheesy Dips

The first cheesy dip that I created was this Beer Cheese Dip. I loved it so much that I then fiddled with it to make the Hamburger Cheese Dip.

Given my obsession, and given the return of “game days” and gatherings on the weekend, I knew I needed to add a new cheesy dip to my repertoire.

Buffalo Chicken Queso

I decided to start with the general basics of the aforementioned beer cheese dip as a starting point but then take it in a different direction. The direction: Buffalo Chicken. The result is really a Buffalo Chicken Queso. An orange cheese sauce with buffalo sauce and chicken.

You might ask how this dip is different from Buffalo Chicken Dip, which I know is all the rage these days. The difference is that Buffalo Chicken Dip seems to usually have white dairy ingredients, either cream cheese, yogurt, sour cream, or ranch dressing or some combination thereof. This queso doesn’t have that. It really focuses instead on the flavors of cheese and Buffalo sauce. Both dips are good, just different. DESCRIPTION

Ingredients

  • 2 Tbsp. butter
  • 3 Tbsp. all-purpose flour
  • 1 and 1/2 cups milk
  • 1/2 cup Buffalo wing sauce
  • 1/2 tsp. garlic powder
  • 2 cups shredded sharp cheddar cheese
  • 2 medium chicken breasts, cooked and shredded

Instructions

  1. In a medium sauce pan melt the butter over medium heat.
  2. Whisk in the flour until it forms a smooth paste. Cook for 1 minute while continuing to whisk. Remove from heat.
  3. Drizzle in the milk a little bit at a time, whisking until smooth after each addition.
  4. Stir in the Buffalo sauce and garlic powder. Increase heat to medium-high and bring to a simmer.
  5. Remove from heat. Stir in cheese until melted in and smooth. Stir in chicken.
  6. Warm over medium-low heat, stirring continuously until heated through.
  7. Serve immediately or transfer to a small slow cooker to keep it warm. This dip can be microwaved to reheat: Heat 30 seconds at a time, stirring after each time, until heated through.
