The Best Zucchini Recipes

These are hands down the five best zucchini recipes ever. The vegetable shines and is not overcooked and mushy – just plain perfect.
Zucchini is one of my favorite vegetables. However, sometimes it doesn’t turn out great. I find that it gets mushy and not great when over-cooked. For this reason I’ve come up with several zucchini recipes that turn out really perfectly every time. I get to cook up one of my faves and know that it will be amazing every time.
Here are my favorite five zucchini recipes:
This is quick and delicious as an appetizer or side dish or even served on top of pasta. It’s broiled round zucchini slices that are then topped with tomato sauce, cheese and breadcrumbs before being broiled some more, just enough to melt the cheese.
I don’t like it when zucchini is overcooked and mushy. This recipe completely avoids that problem because the zucchini are broiled (or grilled) while whole. The outsides get charred and cooked while the insides are still al dente.
One way to guarantee that the zucchini isn’t mushy is to eat it raw. Here I’ve used it as the base for a canape (instead of a cracker or bit of bread). You can also serve zucchini alongside other veggies and dip. When raw it has a nice crunch and fresh flavor.
Here the classic minestrone soup is brightened up for summer with zucchini, summer squash and basil.
I’ve saved the best for last! I love this recipe because it tastes great and because it’s so easy. You toss together zucchini, summer squash, grape tomatoes and garlic. You drizzle that with some whipping cream and top it all with panko bread crumbs and Parmesan cheese. Then it goes into a really hot oven for a short time (450°F for 20 minutes). In the high heat the veggies soften a bit, the breadcrumbs toast and the sauce gets thick and bubbly. Perfect!
