You don’t have time for elaborate meals during the week. I get it. After work, the last thing you want to do is spend an hour dicing, mincing and marinating. You need quick dinners and you want them to be healthy. Here are 15 healthy 15 minute dinners to try!
It’s 5:30 p.m. on a Tuesday. You’re hungry. Your family is marching around the kitchen threatening to inhale a bag of chips if they don’t eat NOW. You somehow need to make dinner in like 15 minutes and you want it to be healthy and you want everyone to actually eat it. I get it. I have sooo been there. So today I have 15 healthy 15 minute dinners to help save your day.
You probably already have the ingredients needed for my Best Chili Recipe. A jar of salsa makes it taste like you spent way more than 10 minutes cooking it. Complete the meal with crackers or crusty bread and a salad.
Keep that salsa handy. You can use it in this Quick Tortilla Soup. This recipe is done in 15 minutes. Let your family customize their soups. Serve with bowls of toppings, such as sour cream, sliced avocado or olives or really anything you have on hand. It’s a crowd pleaser.
There are days (OK, most of the time) when I don’t even think about dinner until 4:45 p.m. And of course, all my meat and fish are hard solid lumps in the freezer. I can still make an impressive dinner cooking fish from frozen. It takes just minutes and a healthy dinner is on the table. Plan ahead when you buy cod or salmon. Portion out individual servings and freeze. It makes it that much easier.
