Special Fried Farro

A wok with cooked farro, scrambled egg, green onion, and cashews

Learn how to make classic fried rice but with farro instead of rice. It’s just as delicious but way healthier.

How To Use Farro

Farro can be used in place of rice or pasta in so many dishes. I’ve been subbing it into a lot of recipes lately and I know you’re going to love it as much as I have. For today’s recipe I’ve used farro instead of rice in a classic Chinese-style fried rice. Farro is also wonderful in soups, like in this Beef and Farro Soup Recipe, and in side dishes, like in this recipe for Farro With Cream Cheese and Spinach.

How To Cook Farro

The recipe below calls for cooked farro so you’ll need to know how to cook some up. Here are my favorite ways to cook farro:

Making Fried Farro

This recipe has delicious sesame and salty soy sauce flavors, scrambled egg, tofu, cashews, and green onion. It works as either a side dish or as a main course. I often make a big batch and use it as a main course one night and then the rest as a side dish the next night.

To make it, you cook the farro. Then you add it to some oil in a large skillet or wok (this is my wok. I love the thick metal and its flat bottom) with some soy sauce. To that you add roasted cashews, pre-marinated and baked tofu (have you seen this stuff? I love it! It’s the best tofu ever, hands down), and scrambled eggs. Warm everything through and then serve topped with chopped green onions.

Ingredients

Units Scale
  • 2 large eggs
  • 1 Tbsp. vegetable oil
  • 1 tsp. toasted sesame oil
  • 3 cups cooked farro
  • 2 tsp. soy sauce
  • 3/4 cup roasted cashews
  • 1 (9.2 oz) package marinated and baked tofu (like this), cubed
  • 1/4 cup chopped green onion

Instructions

  1. Heat a large non-stick skillet over medium low heat. Crack the eggs into a small bowl and mix them up really well. Pour them into the skillet and then tip the skillet around to spread them out. Cook until set completely, 2-3 minutes.
  2. Loosen with a spatula underneath and then roll the egg up jelly-roll-style. Transfer it to a cutting board and slice thinly into spirals. Set aside.
  3. Heat the vegetable and sesame oil in a large skillet or wok over medium heat.
  4. Add the farro and soy sauce, stir to heat through, 4-5 minutes. Add the cashews, tofu and eggs spirals. Stir gently and heat through, 2 minutes. Remove from heat.
  5. Serve topped with green onions.
