Quickest Side Dishes
Here are my four favorite quick and delicious side dishes along with links to more online favorites. Try them all and let me know what you think.
Last week I told you about The Side Dish Solution, the idea that a single delicious side dish can transform an otherwise boring meal. You can see what I mean over here with this Spanish Rice with Pimentos and Peas recipe.
The thing with the Spanish rice, as delicious as it is, is that it calls for brown rice which isn’t exactly quick-cooking. What I wanted to find were a bunch of quick and delicious side dishes to perk up otherwise boring dinners.
I clicked the Soups ‘n’ Sides Tab at the top of my site and looked through the Side Dishes to find the quickest and best ones there.
#1: Easy Greek Tabouli: This grain salad brightens up a meal. And the classic tabouli grain (bulgur wheat) cooks in minutes.
#2: Mushrooms and Leeks with Quick-Cooking Barley: We usually think of barley in soup but it also makes a wonderful side dish. Regular barley takes around 40 minutes to cook but you can buy quick-cooking barley in a box. It’s ready in under 20.
#3: Zucchini Gratin: This pretty vegetable side dish is made by mixing zucchini, summer squash and tomatoes with a bit of cream. You top it with breadcrumbs and bake until bubbly inside and crunchy on top. The best part is it’s ready in 30 minutes.
#4: Lazy Poutine Baked Potatoes: This is an easy 20 minute side dish that makes everyone happy. You cook potatoes in the microwave (or in the oven if you have more time). Then you cut them in half, top them with cheese and pour on hot gravy (a jar of store-bought or leftover gravy from a roast dinner).
