Over 12 delicious and easy quinoa recipes to try in the new year!

I first tried quinoa a few years ago and liked it a lot. But I kept forgetting to cook it for dinner. I wanted to add it to our meal rotation with more regularity because it was healthy, quick-cooking and because we all liked it

I found that the key to remembering to make it was having a couple of go-to recipes that we all liked.

For instance, I regularly make these One-Pot Vegetarian Quinoa Fajitas:

And these Cheesy Quinoa Stuffed Mushrooms are always a big hit with the kids (when they’re in a mushroom-liking mood, that is):

Having the recipes on hand worked and nowadays, we’re as likely to be eating quinoa as we are rice or potatoes. But we do get tired of the same old things. To keep all of us still interested in quinoa, I decided to look around the internet at my favorite blogs and sites for new inspiration.

    I keep forgetting to cook with Quinoa too. And I want to. But my ‘Want To’ list is long. In this case I am forgetting about it.
