Bacon Ranch Guacamole

There’s really nothing I like more than getting into the spirit of an international holiday by making authentic food from the region for our dinner that night. My kids love it, too. They especially love it when it’s a Mexican holiday, because well, it could totally be Taco Tuesday every day here and they’d be happy. They just plain love Mexican food. So, they just plain love Cinco de Mayo, too. It’s such a fun, fresh and colorful holiday that I love it, too. How could I not?
When I think about Mexican food, one of the first things I think of is Avocados From Mexico. They just somehow define the spirit of Mexico for me, because they’re so fresh and colorful. Oh, and the way they taste! Rich, buttery, and full of flavor. I’m a particular fan of guacamole, and you know that no Cinco de Mayo celebration could be complete without a big bowlful of it. Mmmmmm.
For this year’s fun fiesta, I decided to put a new spin on our traditional guacamole. It still has all of those vibrant Avocados From Mexico mashed up in there, but for a tiny twist I went with some ranch flavors, lemon juice, and bacon. Yes. Wow. I know. It’s seriously good.
A couple of quick guacamole tips for you: When buying your avocados, look for fruits with dark pebbly skin that yield to gentle pressure. Those will be ready to use right now. If you’re planning to wait a couple of days, get firmer avocados. If you want to speed up their ripening, then put them in a paper bag with a banana or apple. To slow them down, pop them into the fridge.
What about preventing your guacamole from turning brown? While there is lemon juice in this recipe already, you can stop the guacamole from browning even further by drizzling the top with more lemon juice. If some turns brown, don’t worry at all. It isn’t harmful in any way, but you can simply scrape it away if you don’t like it.

Bacon Ranch Guacamole
- 3 Avocados From Mexico, peeled, pitted and mashed
- 1/3 cup ranch dressing
- 2 strips of cooked bacon, crumbled
- 2 tsp. ranch dressing powder
- 2 tsp. lemon juice (plus more to prevent browning)
- Combine all ingredients in a medium bowl. Drizzle with extra lemon juice to prevent browning, if desired.
