Back when our first baby was born I struggled a lot with finding time to cook the way I was used to. I used to spend tons of time in the kitchen making everything from scratch in long laborious ways. It’s okay. I really liked it. But, enter baby and there just wasn’t time and I didn’t really know how to cook differently.
I started just throwing things onto a big pan and whacking it all into the oven. I kept doing that and got quite good at it. So good that I had my first cookbook idea back then, all about one-pan dinners. That was before the one-pan dinner craze started up. Darn. It could have been huge! Oh well.
I wound up starting this blog instead, and I’m pretty happy with how it has turned out. For one thing, it got me doing the photography and some recipe development for Produce for Kids. They’re a great organization that brings easy healthy meal meal solutions to families and raises money for hungry children while doing it.
When they asked me to share some one-dish meals from their site with you, I felt like I had come full circle a bit, from that first cookbook idea, to my blog, to working with them, to doing a one-dish round up.
